If you find yourself on the road for holidays this year and looking for a little culinary inspiration, we’ve curated a list of some of our favorite holiday recipes that are easy to throw together on the road, whether tent camping or spending the day in your truck camper. Minimal ingredients, maximum flavor, and simple cooking methods make these dishes perfect for your next adventure!

Easy Holiday Recipes to Make on the Road

1. No-Bake Dessert: Festive Reindeer Bites

Add a touch of whimsy to your holiday adventures with these adorable and delicious Reindeer Bites, inspired by Weelicious’s No-Bake Reindeer Bites. These are kid-friendly, ultra festive, and the perfect snack for spending holidays on the road. Better yet – no baking required! 

Ingredients:

  • 1 cup oats
  • ½ cup peanut butter
  • ¼ cup honey
  • ¼ cup raisins or mini chocolate chips
  • Pretzel twists (for antlers)
  • Candy eyes or mini chocolate chips (for eyes)
  • Red candy (for noses)

Instructions:

  1. Mix oats, peanut butter, honey, and raisins or chocolate chips in a bowl until well combined.
  2. Roll the mixture into small balls.
  3. Add pretzel twists for antlers, candy eyes, and a red candy for the nose to each ball to create reindeer faces.
  4. Store in an airtight container until ready to enjoy.

2. One-Burner Meal: Holiday Skillet Hash

This hearty and festive skillet hash is ideal for a chilly evening. It’s the perfect mix of festive, healthy, and tasty! Better yet, it can easily be whipped up in your Four Wheel Camper using one pan. Minimum dishes with maximum flavor! 

Ingredients:

  • 1 cup diced sweet potatoes
  • ½ cup chopped onion
  • ½ cup cooked and crumbled sausage (or plant-based alternative)
  • 2 eggs
  • Salt, pepper, and rosemary to taste

Instructions:

  1. Heat a little oil in a skillet over your one-burner stove.
  2. Add the sweet potatoes and cook until slightly tender.
  3. Stir in the onion and sausage, cooking until the onion is translucent.
  4. Create two small wells in the mixture and crack the eggs into them.
  5. Cover and cook until the eggs are set to your liking. Serve warm.

3. Backpacking Stove Meal: Festive Ramen Stir-Fry

Elevate your ramen game with this quick and flavorful dish! You might not think of ramen as “festive” but mix in red and green peppers to bring together a yummy & holiday-inspired Christmas dish, no matter where you are in the world. Better yet – it’s cheap! Best when looking for festival meals without spending tons of money on fancy ingredients. 

Ingredients:

  • 1 pack instant ramen (discard seasoning packet)
  • 2 tablespoons soy sauce
  • 1 red pepper
  • 1 green pepper
  • 1 red onion
  • 1 tablespoon peanut butter (optional)

Instructions:

  1. Boil water in your backpacking stove pot and cook the ramen noodles.
  2. Drain most of the water, leaving a small amount in the pot.
  3. Stir in the vegetables, soy sauce, and peanut butter, cooking until the veggies are tender. Serve hot.

4. No-Bake Dessert: Holiday Energy Bites

Inspired by Life Made Sweeter’s recipe, these energy bites are festive, easy to make, and perfect for snacking on hikes & adventures. If you plan to be active during the holiday season and want to pack some festive snacks into your backpack, these holiday energy bites are perfect! 

Ingredients:

  • 1 cup oats
  • ½ cup peanut butter
  • ¼ cup honey
  • ¼ cup dried cranberries
  • ¼ cup mini chocolate chips

Instructions:

  1. Mix all ingredients in a bowl until well combined.
  2. Roll into bite-sized balls.
  3. Store in a container or bag for easy access.

5. Dip: Pepper Jelly Cheese Dip 

This warm and cheesy dip is a crowd-pleaser around the campfire and is easily thrown together in less than five minutes. Ringing in the holidays with a group of nomads on the road and need to bring a dish to pass? This dip is perfect! 

Ingredients:

  • 1 package Boursin garlic & herb cheese 
  • 8 oz goat cheese 
  • 1 tbs heavy cream 
  • ½ jar habanero mango pepper jelly 
  • 1 french baguette 

Instructions:

  1. Mix together cheese & heavy cream in a medium bowl 
  2. Spread cheese mix into a shallow, round pan
  3. Evenly spread habanero jelly over cheese mixture in pan 
  4. Slice baguette and serve with dip

6. Foil-Wrapped Meal: Holiday Herb Chicken and Veggies

This foil packet meal is easy to prepare and bursting with holiday flavors. It’s the perfect holiday-night dinner that feels a tad fancy but is still easy to whip up in your truck camper or over a campfire. 

Ingredients:

  • 1 chicken breast
  • 1 cup mixed vegetables (e.g., carrots, green beans, and potatoes)
  • 1 tablespoon olive oil
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste

Instructions:

  1. Place the chicken breast and vegetables on a large piece of foil.
  2. Drizzle with olive oil and season with rosemary, salt, and pepper.
  3. Seal the foil tightly and place over campfire coals or on a grill for 20-30 minutes, flipping halfway through. Ensure the chicken is fully cooked before serving.

7. Campfire Dessert: S’mores Banana Boats

A holiday twist on the classic campfire treat, these S’mores Banana Boats are both fun and easy to make. There’s something about making festive treats over campfire that make it feel extra special. 

Ingredients:

  • 1 banana (per person)
  • Mini marshmallows
  • Chocolate chips
  • Crushed graham crackers (optional)

Instructions:

  1. Slice the banana lengthwise without cutting all the way through.
  2. Stuff the inside with mini marshmallows and chocolate chips.
  3. Wrap the banana in foil and place it over the campfire for 5-10 minutes, until the chocolate and marshmallows are melted.
  4. Carefully unwrap and sprinkle with crushed graham crackers if desired.
